Tips: The hotter the potato when you put it through the ricer, the fluffier the mash, so move fast once the potatoes have been drained.

I sadly found the photography to be less polished (and artistic) than I have grown accustomed to, but the recipes themselves more than make up for that (and at least the recipes each get a picture so you still get a good sense of the dish)! For the mustard mash, add the mustards to the warm cream mixture. For the truffle mash, add the truffle paste and truffle oil to the pan instead.
